Five award-winning saki makers

1:Brand: Watari Bune (no translation, proper name) and Taiheikai, Pacific Ocean
Brewery: Huchu Homare Brewery
Products
Watari Bune Junmai Ginjo "55"
Watari Bune Junmai Daiginjo
Taiheikai Tokubetsu Junmai
Summary: Watari Bune is a pure or heirloom strain of rice, meaning it has not father or mother strain, and has not been intercrossed
with another type of saki rice. It is also the father strain to Yamada Nishiki rice. Watari Bune had gone out of use for 50-someodd years
because it grew tall and harvested late, making it vulnerable to typhoons and insects. The brewery revived this rice, starting with 14 grams
of seedlings, secured from the Japanese National Agricultural Research Institute. They continued harvesting this rice and brewing with it,
quickly winning awards and becoming a cult saki in Japan. It is hard to get and mainly enjoyed at saki bars in Japan by aficionados.
They also make Taiheikai, their original brand.

2:Brand: Chikurin, Bamboo Forest
Brewery: Marumoto Brewery Brand: Shichi Hon Yari, The Seven Spearsmen
Products
Fukamari "Depth" Junmai
Kaoyaka "Lightness" Junmai Ginjo

Summary: Chikurin is made from 100% jika saibai, or homegrown, Yamada Nishiki rice. Most small saki makers work closely with
local contract farmers who grow the rice for the brewery. To make Chikurin, the Marumoto Brewery uses rice they grow themselves.
The people who grow the rice also make the saki, instilling their passion and knowledge into every step of every bottle.
Yamada Nishiki is the most famous saki rice and this saki expresses a real rice character and the beauties of Yamada Nishiki.
