Sky On 57 Opens At Sands Sky Park - Justin Quek Showcases Refined Modern Asian Cuisine In A Spectacular Setting

Marina Bay Sands has launched the highly-anticipated restaurant - Sky on 57 - located at the award-winning Sands SkyPark. Helmed by arguably Singapore's most accomplished chef Justin Quek, Sky on 57 focuses on Modern Asian cuisine, delivered with Quek's usual finesse and his emphasis on premium ingredients, techniques and flavors. Located at the southern end of the Sands SkyPark, at Tower 1 of the Marina Bay Sands Hotel, the 12,000 square feet all-day restaurant contains a bar, lounge, main and private dining rooms, and an outdoor terrace that offers amazing ocean and city views, from dawn to dusk.

Marking his return after six years abroad operating fine-dining French restaurants, Quek's menu at the 240-seater Sky on 57 marries South East Asian ingredients with European influences. The result is distinctive creations such as Nordic Crab Vermicelli, Maine Lobster Hokkien Mee and Wagyu Beef "Cheek" Rendang; accompanied by authentic Asian sauces and home-made condiments.

"Sky on 57 showcases my Asian upbringing and the comfort food that I grew up eating, for instance, the ngor hiang that my grandmother used to cook for the family. I'm giving a modern interpretation to a familiar cuisine, using my European techniques to take
homegrown food to a higher level. It's about bringing out the best of both worlds and creating a fine balance. I'm very excited to be embarking on this new and exciting journey with Marina Bay Sands," said Chef Justin Quek. Other signature dishes include the Lobster "Marco Polo", created using fresh egg pasta and lobster in a slightly spicy, home-made XO sauce; and classic dishes like JQ's signature Foie Gras Xiao Long Bao, which infuses the favorite Asian dumpling with the silky smooth texture of the goose liver.

At daylight, Sky on 57 kicks off with Oriental and Western breakfast menus that feature steamed dumplings and congee, alongside slow-cooked organic eggs, cheese platters and cereals. Lunch and dinner feature a versatile repertoire of a la-carte and set menus that showcase traditional favorites inspired by Asia, incorporating fresh seasonal produce.

During sunset, Sky on 57 adopts a more exclusive vibe, as diners chill out with pre-dinner cocktails in the open terrace while enjoying the spectacular views. Late-night snacks, such as kurobuta pork satay, can be enjoyed with Asian inspired cocktails during supper.

Designed by JZA+D, Sky on 57's modern, flowing forms work to create a dynamic and open environment that enhances its desirable location on the Sands SkyPark. The modern space is understated yet full of stimulating visual features. JZA+D created a sleek setting that is accentuated by glass panels with embedded photographic images; floating ceiling panels with several dropped chandeliers framed by a drop ceiling cutout, and flowing fins around the kitchen. Private dining sections were created by using glass panels with translucent imagery to avoid obstructing views while providing spatial definition. This is further enhanced by a tiered dining space that allows clear views from different levels. Floating ceiling planes help to mediate the scale of the space while creating more intimate areas. The simple, clean lines established in the design were carried through in the design of the furniture and light fixtures.
