Statement from Mira Winery President on TTB Announcement on Underwater Aging of Wine

Napa, Calif. (March 19, 2015) - Today, Mira Winery President Jim Dyke, Jr. issued the following statement regarding the announcement from the Alcohol and Tobacco Tax and Trade Bureau (TTB) on underwater aging of wine:

"Unfortunately, innovating and challenging conventional wisdom with 12 cases of wine has now attracted the attention and heavy handedness of the federal government. In the production and aging of wine details matter. It is in no one’s interest, especially a small producer of premier Napa Valley wines, to produce a product for the consumer that is adulterated."

For the last two years, Mira Winery has been experimenting with a new process for aging. If we can learn from Aquaoir and apply those changes to how wine is aged on land it could potentially revolutionize the way the industry thinks about aging. To date, the experiment has been conducted in two phases, both 60 feet beneath the Charleston Harbor, where data is collected and then the wine is analyzed against the same wine aged on land.
