Stephen Trojahn Is The New Executive Chef At '21' Club
Stephen Trojahn is the newly appointed Executive Chef at '21' Club, effective March 28, 2005. According to '21' General Manager Bryan McGuire, "Stephen's extensive resume helming well-regarded fine dining restaurants within four-star and five-diamond properties throughout America and the Caribbean makes him a perfect fit to raise the bar even higher in our two restaurants and ten banquet rooms." '21' Club is owned by Orient Express Hotels, Trains and Cruises.
Trojahn has spent most of his culinary career with Ritz-Carlton Hotels. From October 2002 through March 2005, he was Executive Chef at Ritz-Carlton Bachelor Gulch, Colorado, a Condi Nast Traveler "Hot List 2003" pick, where he commanded its illustrious Remington's, featuring gourmet mountain cuisine with a creative, indigenous menu reflecting the flavors of Colorado. His "Chef's Table" is a hotspot for notables including Michael J. Fox (a repeat patron), Kelsey and Camille Grammer, and (no pun intended) The Bachelorette's Trista Rehn and Ryan Sutter. All banquets and catering for private off-premise events, plus the hotel's private club, were also under his watchful eye.
From May 2001 through October 2002, Trojahn was Chef de Cuisine at Ritz-Carlton San Juan, Puerto Rico where he received rave reviews from the San Juan Star for his take on "cocina criolla." His star began to rise when he won acclaim on Condi Nast Traveler's "Hot List 2001" during his tenure at R-C Rose Hall, Jamaica.
Throughout his career with Ritz-Carlton, Trojahn earned a reputation for elevating the existing fine dining restaurants in its hotels and resorts. And, as part of the "culinary opening team" at several locations including Rose Hall, Battery Park (NYC), Boston (MA), and Bachelor Gulch, he was cited by R-C management for his teaching techniques resulting in the continuous improvement of the caliber of training for its chefs.
Chef Trojahn hails from Missouri. He studied culinary arts in Jacksonville, Florida where he received ACFEI accreditation. After completing his studies, Chef Trojahn worked in several Florida restaurants from 1988-2000, most notably Ritz-Carlton Amelia Island's The Grill.
Outside of the kitchen, Stephen enjoys golf, hiking and snowboarding, is an avid reader of business books, and his expansive cookbook collection numbers more than 200.
