State and Lake, Roof Arrive Spring 2009
Cibo Matto Arrives Summer 2009

CHICAGO (January 5, 2009) - A journey's end for the true bon vivant...three highly-anticipated restaurants will arrive in Chicago's Loop district at theWit Hotel (201 N. State Street) this year: Cibo Matto, a modern Italian restaurant to be led by acclaimed Chef Todd Stein (David Burke Primehouse, Las Vegas; mk, Chicago and Bank, Minneapolis, among others), opening late summer; State and Lake, an artisanal American restaurant with fare influenced by slow cooking; and Roof, a 7,000-square-foot restaurant and cocktailing destination atop the 27th floor of the hotel, which will also be overseen by Chef Stein. Both State and Lake and Roof will open in late spring.

Created by Atlanta-based Concentrics Restaurants, the full-service development and management firm will operate all three restaurants in addition to the hotel's banquet facilities and room service. Its first endeavor outside of the South, Concentrics Restaurants will dish out its charismatic hospitality, while leaving the innovative design in the hands of The Johnson Studio. Based out of Atlanta, Ga., the prominent design firm has designed a number of top-tiered restaurants around the country, including TRU in Chicago, Fearing's in Dallas, Texas and Concentrics' own group of chic restaurants in Atlanta.

Raising the bar in hospitality and style, each restaurant will be decidedly unique, featuring three chef-driven restaurants under one roof:

State and Lake
Located on the ground floor of theWit, State and Lake will offer a chef-driven menu serving artisanal American cuisine. Cork floors and leather walls house plush banquettes, inviting guests to sit back and enjoy a lunchtime escape or pre-theatre bite. An intimate bar, made from antiqued wood, will offer renowned wines by the glass, specialty beers and handcrafted cocktails. Chef Bradley Manchester, previously with Hotel ZaZa in Houston as well as ENVY Steakhouse and the Hard Rock Hotel & Casino in Las Vegas, will oversee State and Lake, in addition to the hotel's banquet facilities and room service. State and Lake is slated to open late spring 2009 and will be open seven days a week for breakfast, lunch and dinner.

Cibo Matto
Led by Chef Todd Stein, who will be returning to Chicago, Cibo Matto ("crazy food") will offer modern Italian fare. Situated on the second floor of the hotel, Cibo Matto will feature a 10-foot glass salumi and cheese display, a 4,000 bottle wine vault and a Chef's Table in the kitchen, as well as a 30-foot fresco on the ceiling by acclaimed artist and Chicago native, Todd Murphy, who has been collected by celebrities such as Sting and Elton John. The restaurant is slated to open late summer 2009.

Roof
Chef Stein will also oversee Roof, the 7,000-square-foot destination atop the 27th floor of the hotel, featuring both indoor and outdoor spaces open year-round. Chef Todd Stein will offer a menu of 20 small plates that will pair perfectly with a handcrafted gourmet cocktail list. Indoors, the vaulted ceiling will spire to a peak at one corner, rising to 27 feet. This corner will feature a seven-foot glass fireplace, through which views of the surrounding skyline will be visible.
