The Copper Beech Inn today announced Connecticut Magazine awarded three stars to Brasserie Pip, its chic "authentic" French brasserie. The memorable food and warm atmosphere earned Brasserie Pip recognition as "Best New Restaurant" statewide in 2007 in the magazine's Readers Choice awards. This recognition continues to define Brasserie Pip, as one of Connecticut's top dining destinations.

Executive Chef Francois de Melogue's menu features high quality, locally-raised ingredients to help create a memorable dining experience. Maitre d'Hotel Christopher S. Sperling lends a watchful eye over the dining room and manages the Inn's 500-bottle selection wine list and creative cocktail offerings. Inspired by his 1800-title cookbook collection, Chef de Melogue directs the kitchen for both The Copper Beech Inn as well as Brasserie Pip. Prior to joining the Inn's team, Chef de Melogue trained at the New England Culinary Institute then held positions at The Old Drover's Inn, a Relais & Chateaux property, and Pili-Pili in Chicago named by Food & Wine magazine in 2003 as "one of the Top Ten New Restaurant Openings in the World."


Named by the readers of Connecticut Magazine as the Best Country Inn in Connecticut for three consecutive years and the recipient of the 2008 Wine Spectator Best of Award of Excellence, The Copper Beech Inn combines turn-of-the-century charm with luxurious modern conveniences.
