Creating a certified-organic menu is not as difficult when great purveyors are located so close to home. Tilth chef-owner, Maria Hines, and chef de cuisine, Dana Tough, celebrate the people who give the restaurant life with weekly tribute dinners:

The menu changes weekly and will offer dishes normally not available. Featured producers have included Oxbow Farm and Fishing Vessel St. Jude. The Dec. 3 dinner will feature Full Circle Farm.
