Tony Foreman And Cindy Wolf Introduce Pazo, Their Latest Culinary Adventure

This November, Restaurateurs Tony Foreman and Chef Cindy Wolf of the Charleston Group (Charleston restaurant, Petit Louis Bistro, and Bin 604 Wine Sellers) launch PAZO restaurant and lounge in historic Fells Point featuring "Western Mediterranean Peasant" cooking including the classic tables of Sicily, Catalonia, Sardinia, and Campania. Executive Chef Peter Livolsi draws from the culinary traditions and passion of his Sicilian family, notably the Old World techniques and recipes of his grandmother. Diners can expect hedonistic, bucolic cuisine by way of meant-to-be-shared "small plates," Neopolitan pizza, regional cheeses, grilled seafood, and spit-roasted game.

PAZO's 100-bottle wine list highlights exotic Mediterranean selections starting at $15/bottle to include exclusive house labels by Spanish wine importer Jorge Ordonez. A signature cocktail list also incorporates the flavors of the Western Mediterranean with a vast array of grappas and a signature martini made with Sicilian blood oranges.

Intended to exude a timeless feel for the Italian islands, architect and designer Patrick Sutton transformed a space in the E.J. Codd Building into a rustic yet chic two-floor venue complete with soaring ceilings, open kitchen, plush booths, prime people-watching mezzanine and posh-meets-earthy bar and lounge area. As the evening progresses, dining evolves to lounging and dancing with a house DJ and dance floor. The venue intends to "answer Baltimore's hunger pangs for a sophisticated, grown-up playground," states Tony Foreman. "We envision a sensuous place that can meet the needs of the after-work happy hour crowd, mid-evening diners, and late-night loungers alike."

PAZO is open seven nights a week from 5pm until 2am, serving food until 1am. Complimentary valet parking is available. With seating for 250 diners, PAZO also offers two private dining rooms (the Villa Rosa and Avellino) for private functions.
