Today, Tri Tip Grill will fire up California's ranch-born legacy in New York City's iconic 30 Rockefeller Plaza, bringing steakhouse quality preparations and the freshest ingredients to the quick service scene. The concept - from the creators of the Buckhorn Grill - is born in the spirit of the Friday Night Chef's Market in Napa, California where food aficionados, local farmers, artists and wine makers converged in the spirit of living well. The opening of Tri Tip Grill marks tri tip beef's most official debut outside the west, where it is a well-loved tradition. Not only will Tri Tip Grill offer signature tri tip sandwiches and platters, but a full menu of chef recipe salads, fresh salmon, grilled chicken, juicy burgers and stand-out sides - all priced under $10.

Dubbed "the steak worth the hunt," by New York Times food columnist, Mark Bittman, tri tip is the triangular-shaped sirloin cut - unique for its tenderness, strong marbleization and limited availability on the East Coast. The culinary process that gives Tri Tip Grill's beef its claim to fame, has been twenty-years in the making. After a 21-day aging process and savory rub recipe, the beef is charred over a roaring wood fire and finished in a wood-smoke oven to a perfect medium-rare. The result is incredibly juicy and flavorful: tri tip at its finest. Tri Tip Grill's debut location at Rockefeller Center reflects the brand's philosophy of "coming together" and historical legacy through one of Manhattan's most prominent urban hubs. Developed by award-winning architectural and hospitality design firm, Bitton Design Group with the creative direction of Tri Tip Grill founder, Dave Kassling, the 1400 square-foot space is a contemporary spin on true ranch style, including dark wood accents, exposed vintage brick, Douglas Fir paneling, rough-sawn beams, natural slate flooring and black and white photographs. "Our goal was to create a relaxed, rustic feel with a clean, modern taste," Kassling notes. "Here, customers can find the convenience of quick service - with the comforts of home." One of the most significant features of the design is the kitchen's central char-roasting station, which spotlights the Tri Tip Grill's legendary, five-step cooking process, transforming the space into a stage for fresh, top-quality ingredients and a friendly, engaging staff.
