Cook of the Century Eckart Witzigmann is the leading light at Ikarus, the restaurant at Salzburg Airports Hangar-7. In the coming months, Ikarus will see him and his team present some of the worlds best chefs. The guest list for 2004 has just been revealed.
When Ikarus opened its doors in September 2003, it wasnt just the unique location at Hangar-7 and its outstanding key players that raised eyebrows. Above all, it was the daring concept that attracted the culinary worlds attention. Because mastermind Eckart Witzigmann, executive chef Roland Trettl and restaurant manager Manuel Lechner intended to host a different international star in the Hangar-7 kitchen every month. An idea that nobody before them had dared put into practice.
October, November and December 2003 saw the first guest appearances: alongside Witzigmann himself, Ikarus also played host to Jvrg Sackmann and Gerhard Schwaiger. The result was more than just virtuosic cooking it was also proof to industry skeptics that the concept actually worked.
And now, the list of cooks for 2004 is complete: its a list of influential specialists in their fields, celebrated and decorated with stars, toques and all kinds of awards. We present the elite, says Eckart Witzigmann. We can be proud of this list of guest chefs. Each one is special in a different way. Each one is unique in a different way. Each one has his own techniques, his own signature style.
The culinary world tour begins in February with Swiss chef Martin Dalsass, an unsurpassed virtuoso in the use of olive oils. In March, Milans shooting star Carlo Cracco will descend upon Salzburg, and April will see Ikarus hosting Portugals finest chef, the Vorarlberg native Dieter Koschina. In May, the Swiss Andri Jaeger will guide Ikarus masterfully to the roots of the culinary fusion of Eastern and Western culture. In June, Hangar-7 will welcome Lea Linster, the first and so far only woman to have won the Bocuse dOr cooking championship. In July, Norbert Niederkofler will combine Mediterranean, Alpine and Asian influences to a harmonious whole, garnished with playful epicurean wit. In August, Berlins up-and-coming culinary wizard Thomas Kammeier is expected, followed in September by Jean Georges Vongerichten himself, the star from New York. In October, Witzigmann Trettl, Lechner & Co. will be working with the Australian David Thompson, whos probably the best Thai cook in the world. In November, Rainer Becker, whos been wowing Londoners with his Japanese creations, will forsake the Thames for the Salzach. The star-studded year of 2004 will be concluded for Hangar-7 and Ikarus in December with the New Yorker Gray Kunz.
