The World Pastry Forum Recreational Program

For the accomplished home cook who seeks professional coaching in cakes, guidance for their ganache, or tutoring in their torte, the 2004 World Pastry Forum Recreational Program, to be held in Las Vegas on July 5 and 6 is the place to be.

The Recreational Program of the World Pastry Forum was introduced in 2003 in response to the demand from proficient home chefs who wanted access to the classes previously offered only to professionals at the World Pastry Forum, now in its third year. The World Pastry Forum is well known in the trade for its intensive, five-day curriculum taught by the worlds top pastry talent and attracts students worldwide.

The 2004 Recreational Program is a series of six, two-hour classes taught by successful luminaries of the pastry world who are not generally available to non-professionals. Biagio Settepani, of the acclaimed Bruno Bakery and Pasticceria Bruno in New York City, will lead a class on Italian Desserts, and Restaurant Desserts You Can Make at Home will be taught by Jenifer Witte, Executive Pastry Chef at the AAA Five Diamond Award-winning Renoir, at the Mirage Hotel, Las Vegas. Both Settepani and Witte were competitors at the 2003 Inniskillin Icewine National Pastry Team Championship. Retro Desserts, Wayne Brachman, All Occasion Cakes, Cheryl Kleinman, Chocolate Desserts & Confections, Nick Malgieri, and Kids in the Kitchen, Robert and Rachel Ellinger, round out the course schedule.

The program concludes on the eve of the 2004 Inniskillin Icewine World Pastry Team Championship, presented by CapFruit, in which 12 teams of chefs from Australia, Belgium, France, Italy, Japan, Netherlands, Singapore, South Korea, Spain, Switzerland, Taiwan and the, defending champion, United States will compete for the world title, and will be filmed for later broadcast by The Food Network.

In addition to the classes, participants will receive a detailed course syllabus that will include recipes and techniques, daily lunch during the forum, tickets to the exciting Inniskillin Icewine 2004 World Pastry Team Championship presented by CapFruit, July 7 and 8, and seating at the Championship awards ceremony and gala dinner on July 8. Enrollment is limited and on a first-come, first-served basis.
