Pork Ribs

Yield: 3 to 4 Servings
INGREDIENTS:
ΒΌ cup black black pepper
1/8 cup kosher salt
3 to 4 pound rack pork spare ribs
Barbecue sauce
METHOD:
Heat smoker to 250°F. Combine pepper and salt, and rub liberally over spareribs. Put the ribs in the smoker, meat side up. Cook until desired color is reached, about 3 hours. Mop the ribs with barbecue sauce, wrap in foil, and return the meat to the smoker, meat side down. Cook 2 hours more. Rest before serving.
