Barrel-aged White Negroni

Yield: One 9-gallon barrel
INGREDIENTS:
Barrel-aged White Negroni
3 gallons 3 gallons Tanqueray Malacca gin
3 gallons Cocchi Americano
3 gallons Dolin blanc vermouth
To Assemble and Serve
2½ ounces - Barrel-aged White Negroni
grapefruit twist
METHOD:
For the Barrel-aged White Negroni:
Pre-soak the barrel with water to swell wood and decrease leakage; discard water. Combine the gin, Cocchi Americano, and vermouth in barrel. Cover barrel and place in cool, dark space for 5 to 7 weeks, beginning to taste at 4-weeks until desired woodiness and oxidation is achieved. Strain.
To Assemble and Serve:
Stir 2½ ounces Negroni with ice. Strain into a chilled coupe glass and garnish with grapefruit twist.
