Beef Sashimi

1 pound Piedmontese beef strip loin, seared quickly in oil in hot pan
Slice very thinly and arrange on a platter. Serve with these condiments and Ponzu Sauce.
INGREDIENTS:
4 tablespoons white radish, grated
4 tablespoons green onions, finely sliced
4 shiso leaves
4 tablespoons grated wasabi
1 tablespoon ginger, minced
Ponzu Sauce
1 cup lemon juice
1/3 cup rice vinegar
1 cup soy sauce
3 tablespoons mirin
1/3 ounce dried bonito flakes (optional)
1 2-inch square kelp
2 tablespoons tamari
METHOD:
1 pound Piedmontese beef strip loin, seared quickly in oil in hot pan
Slice very thinly and arrange on a platter. Serve with these condiments and Ponzu Sauce.
Mix all ingredients together. Let stand overnight. Strain and serve.
