Bayreuth Brewed Coffee

The Bayreuth coffee brewer is a pretty, sleek tower of porcelain handmade by Walküre in Germany. The brewer has has two cylinders of equal size that stack on top of each other, and the filter is the bottom side of the upper chamber that is entirely fine porcelain mesh. So with the use of a good grinder, you grind the coffee just coarse enough that it doesn’t fall through the mesh, stack the cylinders, and then pour from above. There’s also a lid to the stack with perforations that disperses the brewing water like a shower head, so the grounds are gently but evenly watered throughout. It’s tricky, but when you brew it well the cups are as clear as filter coffee but with the slightest hint of sediment suspended within, that lends the coffee this unbeatable silkiness and raw flavor experience.

INGREDIENTS:

1 liter filtered water
40 grams French press grind coffee

METHOD:

Bring 1 liter of filtered water to a boil.Preheat Bayreuth brewer with a few ounces of water and discard. Add 40 grams French press grind coffee. Place the lid on the Bayreuth and tare to scale. Pour in 100 grams water and wait 60 seconds to bloom the coffee. Add water in 100-gram increments until you reach 680 grams, waiting 20 or so seconds between each pour. Total brewing time should be 4 to 5 minutes; when complete stir coffee before sharing.
