The Mezcal Cocktail

Yield: 1 Cocktail
INGREDIENTS:
Ginger Syrup
½ cup fresh ginger
½ cup simple syrup
To Assemble and Serve
2 ounces Del Maguey Vida mezcal
1 ounce lemon juice
¾ ounce Ginger Syrup
½ ounce clover honey
2 dashes Angostura bitters
METHOD:
For the Ginger Syrup:
Juice the ½ cup of fresh ginger, extracting as much juice as possible. Stir with the simple syrup. Reserve.
To Assemble and Serve:
Combine the ingredients in a cocktail glass with ice. Shake and strain into a rocks glass with one large cube. Serve.
