Margarita with Cadillac Foam

Yield: 1 cocktail

INGREDIENTS:

Margarita
2 ounces silver tequila
1 ounce Cointreau
¾ ounce fresh lime juice
Cadillac Foam
4 ounces orange juice
3 ounces whipped egg whites
2 ounces Grand Marnier
4 dashes Fee Brothers peach bitters
To Assemble and Serve
1 pinch black Hawaiian sea salt

METHOD:

For the Margarita:
Combine silver tequila, Cointreau, and fresh lime juice in shaker. Double strain into a frozen rocks glass.

For the Cadillac Foam:
Combine the orange juice, whipped egg whites, Grand Marnier, and peach bitters in an iSi canister. Screw the head onto the canister and shake until the ingredients are well incorporated. Charge the whipper with 2 NO2 cream chargers. Shake the whipper so that the gas is evenly distributed throughout the liquid.

To Assemble and Serve:
Top Margarita with Cadillac Foam and garnish with the salt.
