‘Mom’s Night’ Nana Sue’s Meatloaf

INGREDIENTS:
Meatloaf
2 tablespoons olive oil
1 green bell pepper, small diced
1 yellow Spanish onion, small diced
salt
freshly ground black pepper
1 teaspoon dried thyme
3 pounds freshly ground chuck
1 pound breakfast pork sausage
4 eggs
1 cup cracker crumbs
15 ounces tomato sauce
To Assemble and Serve
Scalloped potatoes
green beans
METHOD:
For the Meatloaf:
Preheat an oven to 350°F.
Add the olive oil to a large pan on medium heat, and sauté the diced pepper and onion until slightly tender. Season with salt, pepper, and thyme. Once tender, remove from heat.
In a large mixing bowl, add the chuck, sausage, eggs, cracker crumbs, about three-quarters of the tomato sauce, and the peppers and onions from the pan until well incorporated. Season well and hand form the mixture into 2 even loaves. Divide the remaining tomato sauce over each loaf. Place the loaves into the oven for 1 hour. Remove from the oven and let rest for 10 minutes.
To Assemble and Serve:
Slice Meatloaf and serve with scalloped potatoes and green beans.
