Asian Caesar Dressing

Yield: 4 cups

INGREDIENTS:

1 pound silken tofu
1 inch piece ginger, peeled and sliced
8 anchovy fillets
¼ cup soy or tamari (or half fish sauce and half soy)
3 tablespoons Dijon mustard
1 tablespoon garlic, chopped
1 jalapeno chile, chopped or 1 teaspoon Asian hot sauce
1 cup water
½ cup canola oil
2 tablespoons cilantro, chopped

METHOD:

Put all ingredients except oil and cilantro in blender and mix until smooth. Slowly add oil until the sauce is emulsified and thick and then add the cilantro.
