Terre/Soil Soup

INGREDIENTS:
100 grams Special YUI Natural Farm soil, collected from November to February
1 kilogram unwashed YUI Natural Farm burdock root, coarsely chopped
3 liters spring water
canola oil
METHOD:
In a deep pan over high flame, heat oil and add burdock and soil and stir-fry. When strongly aromatic, add water and bring to boil. Reduce heat to low and gently simmer for 90 minutes. Transfer to a Thermomix and mix for 5 seconds. Pass through a large chinois, pressing with a ladle to strain out all liquid. Line a chinois with a coffee filter and strain liquid into a saucepot. Simmer liquid until 800 milliliters remain. Whip with an immersion blender and serve.
