Kaiserschmarrn: Raisin Omelet with Raspberries, Elderberries, and Rose Petals

INGREDIENTS:
60 grams cornstarch
250 grams quark
20 grams vanilla sugar
salt
lemon zest
4 egg yolks
4 egg whites
20 grams sugar
Powdered sugar
Local raspberries
Elderberries
Rose petals
METHOD:
Preheat the oven to 340°F. Mix the cornstarch with the quark, vanilla sugar, salt, lemon zest, and egg yolks. Whisk the egg whites with the sugar and fold into the quark mixture. Pour into a pan and cook in the oven for 5 minutes. Remove the pan from the oven, and break the Kaiserschmarren in the pan. Dust with powdered sugar and briefly caramelize. Serve with local raspberries, elderberries, and rose petals.
